Ultimate Patty Melt with Secret Sauce

Ingredients

For the Secret Sauce:

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • 1 teaspoon sriracha (optional for heat)

For the Patty Melt:

  • 1 lb ground beef (80/20 blend)
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 8 slices rye bread
  • 8 slices Swiss cheese (or American cheese)
  • Salt and pepper to taste
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Make the Secret Sauce:
    • Combine all sauce ingredients in a small bowl and mix well. Refrigerate for at least 30 minutes to let flavors meld.
  2. Caramelize the Onions:
    • Heat 1 tablespoon butter and olive oil in a skillet over medium-low heat.
    • Add onions and cook slowly, stirring occasionally, for 25-30 minutes until golden brown and caramelized. Season with salt.
  3. Form and Cook the Patties:
    • Divide ground beef into 4 equal portions and form into thin patties slightly larger than your bread slices.
    • Season both sides with salt, pepper, and Worcestershire sauce.
    • Cook in a skillet over medium-high heat for 3-4 minutes per side (for medium). Remove and set aside.
  4. Assemble the Sandwiches:
    • Spread secret sauce on one side of each bread slice.
    • Layer: bread (sauce side up), cheese, beef patty, caramelized onions, another slice of cheese, and top with another bread slice (sauce side down).
  5. Grill the Sandwiches:
    • Melt remaining butter in a clean skillet over medium heat.
    • Grill sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
    • Press down lightly with a spatula while cooking.
  6. Serve:
    • Cut diagonally and serve hot with extra secret sauce for dipping if desired.

Pro Tips:

  • For extra flavor, use a blend of Swiss and American cheese
  • Try marbling some of the secret sauce between the patty and onions
  • Use a cast iron skillet for the best crust on your bread
  • Let the patties rest for 5 minutes after cooking before assembling
