Tomato Basil Chicken with Burrata 🍅🧀

*Juicy pan-seared chicken topped with blistered tomatoes, fresh basil, and creamy burrata—a 30-minute gourmet meal!*


Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts (or thighs)

  • 2 cups cherry tomatoes, halved

  • 8 oz burrata cheese, room temp

  • ¼ cup fresh basil, torn

  • 3 tbsp olive oil, divided

  • 3 garlic cloves, minced

  • 1 tbsp balsamic glaze (or reduction)

  • 1 tsp dried oregano

  • ½ tsp red pepper flakes (optional)

  • Salt & black pepper to taste


Instructions

1. Cook the Chicken

  1. Pat chicken dry, season with salt, pepper, and oregano.

  2. Heat 2 tbsp olive oil in a skillet over medium-high. Sear chicken 5-6 mins per side until golden and cooked through (165°F internal temp). Transfer to a plate.

2. Sauté Tomatoes & Garlic

  1. In the same skillet, add 1 tbsp olive oil.

  2. Add tomatoes cut-side down, cook 2 mins without stirring to blister.

  3. Add garlic and red pepper flakes, sauté 1 minute until fragrant.

3. Assemble & Serve

  1. Return chicken to the skillet, nestling into tomatoes.

  2. Tear burrata over the top, drizzle with balsamic glaze, and scatter basil.

  3. Let burrata soften slightly (1-2 mins) before serving.


Serving Suggestions

🍝 Over pasta (toss with the tomato pan sauce)
🥖 With crusty bread (to soak up juices)
🥗 Alongside arugula salad (lightens the dish)
