*Juicy pan-seared chicken topped with blistered tomatoes, fresh basil, and creamy burrata—a 30-minute gourmet meal!*
Ingredients (Serves 4)
-
4 boneless, skinless chicken breasts (or thighs)
-
2 cups cherry tomatoes, halved
-
8 oz burrata cheese, room temp
-
¼ cup fresh basil, torn
-
3 tbsp olive oil, divided
-
3 garlic cloves, minced
-
1 tbsp balsamic glaze (or reduction)
-
1 tsp dried oregano
-
½ tsp red pepper flakes (optional)
-
Salt & black pepper to taste
Instructions
1. Cook the Chicken
-
Pat chicken dry, season with salt, pepper, and oregano.
-
Heat 2 tbsp olive oil in a skillet over medium-high. Sear chicken 5-6 mins per side until golden and cooked through (165°F internal temp). Transfer to a plate.
2. Sauté Tomatoes & Garlic
-
In the same skillet, add 1 tbsp olive oil.
-
Add tomatoes cut-side down, cook 2 mins without stirring to blister.
-
Add garlic and red pepper flakes, sauté 1 minute until fragrant.
3. Assemble & Serve
-
Return chicken to the skillet, nestling into tomatoes.
-
Tear burrata over the top, drizzle with balsamic glaze, and scatter basil.
-
Let burrata soften slightly (1-2 mins) before serving.
Serving Suggestions
🍝 Over pasta (toss with the tomato pan sauce)
🥖 With crusty bread (to soak up juices)
🥗 Alongside arugula salad (lightens the dish)
Why It Works
-
Burrata’s cool creaminess balances the warm, savory chicken.
-
Blistered tomatoes add sweet acidity.
-
Balsamic glaze ties everything together with a tangy finish.
Tip: For extra flavor, marinate chicken in 1 tbsp olive oil + 1 minced garlic clove + 1 tsp lemon zest for 30 mins before cooking.
A restaurant-worthy dish made effortlessly! 😋🍴
