The Legendary Enchirito 🌯🔥

This is the exact recipe that won over a 92-year-old grandma—twice! A hearty, saucy, cheesy mashup of enchiladas and burritos, just like the old-school Taco Bell classic (but better).


🍽️ Ingredients

For the Filling:

  • 1 lb ground beef (or ground turkey)

  • 1 (16 oz) can refried beans (traditional or black bean style)

  • 1 packet taco seasoning (or 2 tbsp homemade blend)

  • ¼ cup water

For Assembly:

  • 6 large flour tortillas (burrito-size)

  • 1 (10 oz) can red enchilada sauce (or homemade)

  • 1½ cups shredded cheddar cheese

  • ½ cup shredded Monterey Jack cheese

Optional Toppings:

  • Chopped onions

  • Sliced black olives

  • Sour cream

  • Diced tomatoes

  • Fresh cilantro

1. Cook the Filling

  • Brown ground beef in a skillet; drain fat.

  • Stir in refried beans, taco seasoning, and water. Simmer 5 mins until thick.

2. Assemble the Enchiritos

  1. Warm tortillas slightly (to prevent tearing).

  2. Spread 2 tbsp enchilada sauce down the center of each tortilla.

  3. Add a heaping ½ cup of beef-bean mixture, then sprinkle with cheddar cheese.

  4. Roll up tightly (like a burrito) and place seam-side down in a greased 9×13-inch baking dish.

3. Sauce & Cheese

  • Pour remaining enchilada sauce over the top.

  • Sprinkle with Monterey Jack cheese and olives/onions (if using).

4. Bake

  • Cover with foil and bake at 350°F (175°C) for 20 mins.

  • Uncover, bake 5–10 more mins until bubbly.

5. Serve

  • Top with sour cream, cilantro, or extra cheese.
