Sweet Potato Rocambole with Minced Meat

Here’s a hearty and flavorful Sweet Potato Roll (Roulade) with Minced Meat—a twist on the classic “rocambole” (Brazilian savory roll), combining sweet potatoes, spiced meat, and cheese for a comforting meal.

Prep Time: 20 mins | Cook Time: 40 mins | Serves: 6

Ingredients:

For the Sweet Potato Dough:

  • 2 cups mashed cooked sweet potatoes (about 2 large potatoes)

  • 1 ½ cups all-purpose flour (or gluten-free flour blend)

  • 1 egg

  • 2 tbsp butter, melted

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional)

For the Meat Filling:

  • 1 lb (450g) ground beef or turkey

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • ½ tsp oregano

  • ½ cup tomato sauce

  • ½ cup shredded cheese (cheddar, mozzarella, or feta)

  • Salt & pepper to taste

  • 1 tbsp olive oil

For Topping (Optional):

  • 1 egg yolk (for brushing)

  • Extra cheese & herbs


Instructions:

1️⃣ Prepare the Filling:

  1. Heat olive oil in a pan. Sauté onion and garlic until soft.

  2. Add ground meat, breaking it up. Cook until browned.

  3. Stir in spices, tomato sauce, and salt/pepper. Simmer for 5 mins. Let cool slightly.

2️⃣ Make the Sweet Potato Dough:

  1. Mix mashed sweet potatoes, flour, egg, melted butter, salt, pepper, and paprika until a soft dough forms (add more flour if sticky).

  2. Roll out the dough between two sheets of parchment paper into a rectangle (~12×10 inches).

3️⃣ Assemble & Bake:

  1. Spread the meat filling evenly over the dough, leaving a 1-inch border. Sprinkle cheese on top.

  2. Carefully roll it up (like a jelly roll), using the parchment to help. Seal the edges.

  3. Transfer to a greased baking sheet, seam-side down. Brush with egg yolk for shine (optional).

  4. Bake at 375°F (190°C) for 25–30 mins until golden.

  5. Sprinkle extra cheese and bake 5 more mins until melted.

4️⃣ Serve:

  • Slice and enjoy warm with a green salad or yogurt sauce.

  • Extra creamy: Add cream cheese to the filling.
