  • 1½ cups all-purpose flour
  • 1 cup chopped pecans (toasted for extra flavor)

  • ½ cup packed brown sugar
  • 2 large eggs, room temp
  • ½ cup melted butter (or vegetable oil)
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder

  • ½ tsp salt

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

3️⃣ Combine Dry Ingredients:

  • In another bowl, mix flour, baking powder, baking soda, salt, and cinnamon (if using).

4️⃣ Fold Together:

  • Gradually add dry ingredients to wet, mixing until just combined (don’t overmix).
  • Fold in pecans (reserve 2 tbsp for topping).

5️⃣ Bake:

  • Pour batter into pan. Sprinkle reserved pecans on top.
  • Bake 50-60 mins until a toothpick comes out clean.
  • Cool in pan 10 mins, then transfer to a wire rack.
