Super Soft Vanilla Breakfast Cake

Light, fluffy, and subtly sweet—this simple cake is perfect for breakfast, brunch, or a snack with coffee!


Ingredients:

  • 2 cups (250g) all-purpose flour

  • ¾ cup (150g) sugar (adjust to taste)

  • 2 tsp (8g) baking powder

  • ½ tsp (3g) salt

  • 1 cup (240ml) milk (whole or plant-based)

  • 1 large egg (optional, for extra richness)

  • ¼ cup (60ml) melted butter or oil (optional, but keeps it moist)

  • 1½ tsp (7ml) vanilla extract


Instructions:

1. Prep & Mix:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch pan or line with parchment.

  2. Whisk dry ingredients: Flour, sugar, baking powder, and salt in a bowl.

  3. Mix wet ingredients: In another bowl, combine milk, egg (if using), melted butter/oil, and vanilla.

  4. Combine: Pour wet into dry ingredients. Gently fold until just mixed (don’t overwork the batter).

2. Bake:

  • Pour batter into the pan. Bake 25-30 mins until golden and a toothpick comes out clean.

3. Serve:

  • Let cool slightly. Dust with powdered sugar, drizzle honey, or top with fresh berries!


Tips for Perfection:

🌿 Add-ins: Fold in blueberries, lemon zest, or cinnamon for variation.
🔥 Extra Moist: Replace ¼ cup milk with yogurt or sour cream.
🍞 No Egg? Works without it, but the egg adds softness.

Enjoy warm with butter or jam! 😊

(Need a glaze? Mix ½ cup powdered sugar + 1 tbsp milk + ½ tsp vanilla.)
