Strawberry Crunch Cheesecake & Banana Pudding Cheesecake

Two creamy, nostalgic-inspired cheesecakes that bring the flavors of classic desserts to life—one with strawberry shortcake crunch and the other with banana pudding & vanilla wafers!


🍓 Strawberry Crunch Cheesecake

Ingredients

For the Crust:

  • 2 cups (200g) Golden Oreos (or vanilla cookies), crushed

  • ¼ cup (55g) unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz (675g) cream cheese, softened

  • 1 cup (200g) granulated sugar

  • 1 cup (240g) sour cream

  • 3 eggs, room temperature

  • 1 tbsp vanilla extract

  • ½ cup (120ml) strawberry puree (from fresh or frozen strawberries)

For the Strawberry Crunch Topping:

  • 1 cup (100g) vanilla cookies or shortbread, crushed

  • ¼ cup (30g) freeze-dried strawberries, crushed

  • 2 tbsp (30g) unsalted butter, melted

  • 1-2 tbsp strawberry Jell-O powder (optional, for color)


Instructions

  1. Crust: Mix crushed cookies and butter. Press into a 9-inch springform pan. Bake at 325°F (160°C) for 10 mins. Cool.

  2. Filling: Beat cream cheese and sugar until smooth. Add sour cream, eggs, vanilla, and strawberry puree. Pour over crust.

  3. Bake: Bake 50-60 mins until set but slightly jiggly. Cool, then refrigerate 4+ hours.

  4. Topping: Mix crushed cookies, freeze-dried strawberries, butter, and Jell-O. Sprinkle over chilled cheesecake.


🍌 Banana Pudding Cheesecake

Ingredients

For the Crust:

  • 2 cups (200g) Nilla Wafers, crushed

  • ¼ cup (55g) unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz (675g) cream cheese, softened

  • 1 cup (200g) granulated sugar

  • 1 cup (240g) mashed ripe bananas (~2 large)

  • 1 cup (240g) sour cream

  • 3 eggs, room temperature

  • 1 tbsp vanilla extract

  • 1 tsp banana extract (optional)

For the Topping:

  • 1 cup (240ml) whipped cream

  • ½ cup (50g) Nilla Wafers, crushed

  • Fresh banana slices (tossed in lemon juice to prevent browning)


Instructions

  1. Crust: Mix crushed Nilla Wafers and butter. Press into a 9-inch springform pan. Bake at 325°F (160°C) for 10 mins. Cool.

  2. Filling: Beat cream cheese and sugar until smooth. Add mashed bananas, sour cream, eggs, and extracts. Pour over crust.

  3. Bake: Bake 50-60 mins until set but slightly jiggly. Cool, then refrigerate 4+ hours.

  4. Topping: Spread whipped cream over cheesecake. Garnish with crushed wafers and banana slices.
