Soft Apple Cookies 🍏🍪

Pillowy, cake-like cookies packed with fresh apple chunks and dusted with powdered sugar—so tender they’ll vanish in minutes!

📝 Ingredients

  • 2 large eggs, room temperature

  • ½ cup (100g) granulated sugar

  • Pinch of salt

  • ½ cup (115g) unsalted butter, softened

  • 2¼–2½ cups (320–340g) all-purpose flour (added gradually)

  • 1 Tbsp (14g) baking powder

  • 2 medium apples, peeled & diced (~1½ cups)

  • Powdered sugar, for dusting

Optional:

  • 1 tsp cinnamon or vanilla extract


👩‍🍳 Instructions

1. Make the Dough

  1. In a bowl, beat eggs, sugar, and salt until pale (~2 mins).

  2. Add softened butter and mix until smooth.

  3. Gradually add flour + baking powder (start with 2¼ cups). Fold in diced apples (dough should be soft but not sticky).

2. Shape & Bake

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.

  2. Drop 1.5-Tbsp portions of dough onto the sheet (space 2″ apart).

  3. Bake for 10-12 mins until lightly golden (don’t overbake—they stay pale!).

3. Finish

  • Cool for 5 mins, then dust with powdered sugar.

  • Flour note: Add gradually until dough barely sticks to hands.

  • Apple prep: Pat diced apples dry with a towel to avoid excess moisture.

  • Storage: Keep in an airtight container for 3 days (or freeze unbaked dough balls).
