Slow Cooker Million Dollar Chicken

🍗 Slow Cooker Million Dollar Chicken

Prep Time: 10 mins
Cook Time: 4-6 hours (Low) or 2-3 hours (High)
Servings: 6

Ingredients:

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 8 oz cream cheese, softened
  • 1 cup sour cream (or Greek yogurt)
  • 1 (10.5 oz) can cream of chicken soup (or mushroom)
  • ½ cup chicken broth
  • 1 packet ranch seasoning mix (or 2 tbsp homemade ranch seasoning)
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled (or ½ cup real bacon bits)
  • 1 sleeve Ritz crackers, crushed (about 30 crackers)
  • ¼ cup melted butter
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions:

  1. Prep the slow cooker:
    • Lightly grease the crockpot or use a liner for easy cleanup.
  2. Layer the chicken:
    • Place chicken at the bottom of the slow cooker. Season with salt & pepper.
  3. Make the creamy sauce:
    • In a bowl, mix cream cheese, sour cream, cream of chicken soup, broth, and ranch seasoning until smooth.
    • Pour over the chicken, spreading evenly.
  4. Cook:
    • Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until chicken is tender.
  5. Add cheese & bacon:
    • Shred the chicken lightly with forks (or leave whole).
    • Sprinkle cheddar cheese and bacon on top.
  6. Add the buttery cracker topping:
    • Mix crushed Ritz crackers with melted butter, then sprinkle over the cheese.
    • Cover and cook on HIGH for 15-20 mins to crisp the topping (or broil in the oven for 3-5 mins if your slow cooker has a removable pot).
  7. Garnish & serve:
    • Sprinkle with fresh parsley and serve over rice, mashed potatoes, or noodles.

💡 Variations & Tips:

  • Lighter version: Use low-fat cream cheese, Greek yogurt, and skip the cracker topping.
  • Extra veggies: Add sautéed mushrooms, spinach, or peas.
  • Spicy twist: Mix in diced jalapeños or a dash of hot sauce.
  • Crispier topping? Transfer to a baking dish, add crackers, and broil for 2-3 mins.
