  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper

For the Skinny Glaze:

  • 3 tbsp ketchup
  • 1 tsp honey or maple syrup
  • 1 tsp Dijon mustard (optional, adds tang)

1. Preheat Oven

  • Preheat to 375°F (190°C).
  • Line a baking sheet with parchment paper or lightly grease a loaf pan.

2. Mix the Meatloaf

  1. In a large bowl, combine all meatloaf ingredients.
  2. Mix gently with your hands or a spatula until just combined. Don’t overwork it — it can get tough.

3. Form & Bake

  • Shape mixture into a loaf and place on prepared baking sheet (or press into a loaf pan).
  • Bake uncovered for 30 minutes.

4. Add the Glaze

  • While baking, mix glaze ingredients in a small bowl.
  • After 30 minutes, remove meatloaf from the oven.
  • Spread glaze over the top.

5. Finish Baking

  • Return to oven and bake for 15 more minutes, or until internal temp reaches 160°F (71°C).

6. Rest & Serve

  • Let the meatloaf rest for 5–10 minutes before slicing.
  • Serve with roasted veggies, mashed cauliflower, or a side salad.
