Cook Time: 10 mins

Ingredients:

For the Steak & Marinade:

  • 1 lb flank steak or sirloin, thinly sliced against the grain

  • 2 tbsp soy sauce (or tamari for gluten-free)

  • 1 tbsp oyster sauce

  • 1 tbsp Shaoxing wine (or dry sherry)

  • 1 tsp cornstarch

  • 1 tsp sesame oil

  • ½ tsp black pepper (freshly ground)

For the Stir-Fry:

  • 2 tbsp vegetable oil (divided)

  • 1 large onion, sliced

  • 1 green bell pepper, sliced

  • 1 red bell pepper, sliced

  • 3 cloves garlic, minced

  • 1 tsp ginger, grated

  • 2 tbsp soy sauce

  • 1 tbsp hoisin sauce (optional)

  • ½ tsp sugar (or sugar substitute)

  • ¼ tsp red pepper flakes (optional, for heat)

  • 2 tbsp water or beef broth

  • 1 tsp cornstarch (mixed with 1 tbsp water, for thickening)

  • Green onions, sliced (for garnish)

Instructions:

  1. Marinate the Beef:

    • In a bowl, combine sliced steak with soy sauce, oyster sauce, Shaoxing wine, cornstarch, sesame oil, and black pepper. Mix well and let sit for 10-15 minutes.

  2. Stir-Fry the Beef:

    • Heat 1 tbsp oil in a wok or large skillet over high heat.

    • Add the beef in a single layer and sear for 1-2 minutes per side until browned but not fully cooked. Remove and set aside.

  3. Cook the Vegetables:

    • Add the remaining 1 tbsp oil to the pan.

    • Stir-fry onions and bell peppers for 2-3 minutes until slightly softened.

    • Add garlic and ginger, stir for 30 seconds until fragrant.

  4. Combine & Sauce:

    • Return the beef to the pan.

    • Add soy sauce, hoisin, sugar, red pepper flakes, and water/broth. Stir well.

    • Pour in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.

  5. Garnish & Serve:

    • Sprinkle with green onions.

    • Serve hot over steamed rice or cauliflower rice for a low-carb option.

Tips:

✅ For extra tenderness: Use baking soda (¼ tsp) in the marinade (optional).
✅ Spicier version: Add 1-2 chopped Thai chilies or extra red pepper flakes.
✅ Best with high heat: Cook quickly to keep beef tender and veggies crisp.

Enjoy your sizzling, savory, and slightly spicy Chinese Pepper Steak! 🍛🔥
