Savory Veggie & Ham Loaf

A hearty, protein-packed loaf loaded with veggies, ham, and cheese—perfect for meal prep or a cozy dinner!


📝 Ingredients

Main Mix

  • 2 cups cooked ham, diced (or turkey/chicken)

  • 1 ½ cups shredded zucchini (squeezed dry)

  • 1 cup shredded carrots

  • ½ cup diced bell peppers (any color)

  • ½ cup diced onion

  • 3 cloves garlic, minced

  • 1 ½ cups shredded cheese (cheddar, Swiss, or mozzarella)

Binding Agents

  • 4 large eggs, beaten

  • ½ cup breadcrumbs (or almond flour for low-carb)

  • ¼ cup milk (or unsweetened almond milk)

  • 1 tbsp Dijon mustard

  • 1 tsp dried thyme

  • ½ tsp paprika

  • Salt & pepper to taste

Glaze (Optional)

  • 2 tbsp honey or maple syrup

  • 1 tbsp apple cider vinegar


👩🍳 Instructions

1️⃣ Prep: Preheat oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line with parchment.
2️⃣ Sauté veggies: In a skillet, cook onion, garlic, bell peppers, and carrots for 5 mins until soft. Let cool slightly.
3️⃣ Mix everything: In a bowl, combine ham, sautéed veggies, zucchini, cheese, eggs, breadcrumbs, milk, mustard, and spices.
4️⃣ Bake: Transfer to the loaf pan. Brush with glaze (if using). Bake 45-50 mins until golden and set (internal temp: 160°F/71°C).
5️⃣ Rest 10 mins before slicing.

✔ Make ahead: Refrigerate unbaked mix overnight, then bake fresh.
✔ Low-carb: Swap breadcrumbs for crushed pork rinds or almond flour.
✔ Extra flavor: Add 1 tsp Worcestershire sauce to the mix.
