Ingredients
- 4 bone-in pork chops (¾-inch thick)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 2 tbsp olive oil or butter
- 1 medium onion, thinly sliced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- ½ cup heavy cream (or whole milk for lighter gravy)
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 2 tbsp fresh parsley, chopped
(Optional: 1 tbsp cornstarch mixed with 2 tbsp water for thicker gravy)
Instructions
1. Season & Sear Pork Chops:
- Pat chops dry and season with salt, pepper, garlic powder, and paprika.
- Heat oil in a large skillet over medium-high heat. Sear chops 3-4 mins per side until golden. Remove and set aside.
2. Sauté Veggies:
- In the same skillet, add onion and mushrooms. Cook 5 mins until softened.
- Stir in garlic and cook 1 min until fragrant.
3. Make the Gravy:
- Pour in chicken broth, scraping up browned bits. Simmer 2 mins.
- Reduce heat to medium-low. Add cream, Worcestershire, and Dijon. Stir well.
- (For thicker gravy: Add cornstarch slurry and simmer 1-2 mins.)
4. Finish & Serve:
- Return pork chops to the skillet, spooning gravy over them.
- Cover and simmer 5-7 mins until chops reach 145°F (63°C) internally.
- Garnish with parsley and serve hot over mashed potatoes, rice, or noodles.
Pro Tips
✔ Don’t overcrowd the pan—sear chops in batches if needed.
✔ Rest the chops 5 mins before serving for juiciness.
