Instructions
1. Make the Cake:
1️⃣ Prep: Preheat oven to 350°F (175°C). Grease & flour two 8-inch round pans or a 9×13” sheet pan.
2️⃣ Dry Mix: Whisk flour, baking powder, baking soda, and salt. Set aside.
3️⃣ Cream Butter & Sugar: Beat butter and sugar until fluffy (~3 mins). Add eggs one at a time, then vanilla.
4️⃣ Alternate Wet & Dry:
-
Mix in ½ the flour, then pineapple + juice, then remaining flour.
-
Stir in buttermilk until just combined (don’t overmix).
5️⃣ Bake 25-30 mins (round pans) or 30-35 mins (sheet pan) until a toothpick comes out clean. Cool 10 mins before glazing.
2. Make the Glaze:
-
Whisk powdered sugar, pineapple juice, melted butter, and vanilla until smooth. Adjust thickness with more juice or sugar.
3. Assemble:
-
For layer cake: Spread glaze between layers and on top.
-
For sheet cake: Poke holes in warm cake and pour glaze over for a soak-in effect.
