Pineapple Layer Cake with Glaze

This tropical-inspired cake is super moist, lightly sweet, and bursting with pineapple flavor—topped with a simple glaze that soaks in for extra deliciousness!


Ingredients

For the Cake:

  • 2 ½ cups (310g) all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ cup (1 stick / 113g) unsalted butter, softened

  • 1 cup (200g) granulated sugar

  • 2 large eggs, room temp

  • 1 tsp vanilla extract

  • 1 cup (240ml) crushed pineapple (with juice, do not drain)

  • ½ cup (120ml) buttermilk (or sub: ½ cup milk + ½ tbsp lemon juice)

For the Pineapple Glaze:

  • 1 cup (120g) powdered sugar

  • 2-3 tbsp pineapple juice (from canned pineapple)

  • 1 tbsp melted butter

  • ½ tsp vanilla extract

Optional Add-Ins:

  • Toasted coconut flakes

  • Maraschino cherries for garnish


Instructions

1. Make the Cake:

1️⃣ Prep: Preheat oven to 350°F (175°C). Grease & flour two 8-inch round pans or a 9×13” sheet pan.
2️⃣ Dry Mix: Whisk flour, baking powder, baking soda, and salt. Set aside.
3️⃣ Cream Butter & Sugar: Beat butter and sugar until fluffy (~3 mins). Add eggs one at a time, then vanilla.
4️⃣ Alternate Wet & Dry:

  • Mix in ½ the flour, then pineapple + juice, then remaining flour.

  • Stir in buttermilk until just combined (don’t overmix).
    5️⃣ Bake 25-30 mins (round pans) or 30-35 mins (sheet pan) until a toothpick comes out clean. Cool 10 mins before glazing.

2. Make the Glaze:

  • Whisk powdered sugar, pineapple juice, melted butter, and vanilla until smooth. Adjust thickness with more juice or sugar.

3. Assemble:

  • For layer cake: Spread glaze between layers and on top.

  • For sheet cake: Poke holes in warm cake and pour glaze over for a soak-in effect.

  • Garnish with toasted coconut or cherries if desired.
