Pineapple Dream Bundt

A tropical, ultra-moist Bundt cake soaked in a sweet pineapple glaze—perfect for potlucks or summer desserts!


🍍 Ingredients

For the Cake:

  • 3 cups (375g) all-purpose flour

  • 2 cups (400g) granulated sugar

  • 1 tsp baking soda

  • 1 tsp salt

  • 3 large eggs, room temperature

  • 1½ cups (360ml) pineapple juice (reserved from canned pineapple)

  • ½ cup (120ml) vegetable oil

  • 2 tsp vanilla extract

  • 1 (20 oz) can crushed pineapple, drained (reserve juice!)

For the Glaze:

  • ½ cup (120ml) pineapple juice (from reserved can liquid)

  • ½ cup (100g) granulated sugar

  • ½ cup (115g) unsalted butter

  • 1 tsp vanilla extract

Optional Garnish:

  • Toasted coconut flakes

  • Maraschino cherries

  • Powdered sugar


📝 Instructions

1. Make the Cake:

  1. Preheat oven to 325°F (165°C). Grease and flour a 10- or 12-cup Bundt pan thoroughly.

  2. Dry ingredients: Whisk flour, sugar, baking soda, and salt in a large bowl.

  3. Wet ingredients: In another bowl, beat eggs, pineapple juice, oil, and vanilla. Gradually mix into dry ingredients until just combined. Fold in crushed pineapple.

  4. Bake 50–60 minutes until a toothpick comes out clean. Cool in pan 15 mins, then invert onto a rack.

2. Make the Glaze:

  1. In a saucepan, combine pineapple juice, sugar, and butter. Bring to a boil, then simmer 3 mins, stirring constantly. Remove from heat; stir in vanilla.

  2. Soak the cake: While cake is still warm, poke holes all over with a skewer. Slowly pour glaze over the top, letting it soak in.

3. Serve:

  • Let cool completely. Garnish with toasted coconut or a dusting of powdered sugar.


✨ Tips for Success

✅ Extra moist: Use all the juice from the canned pineapple (adjust flour if batter seems too thin).
✅ No Bundt pan? Bake in a 9×13-inch pan for 35–40 mins.
✅ Storage: Keeps well covered at room temp for 3 days or refrigerated for 1 week.
