📝 Instructions
1. Make the Cake:
-
Preheat oven to 325°F (165°C). Grease and flour a 10- or 12-cup Bundt pan thoroughly.
-
Dry ingredients: Whisk flour, sugar, baking soda, and salt in a large bowl.
-
Wet ingredients: In another bowl, beat eggs, pineapple juice, oil, and vanilla. Gradually mix into dry ingredients until just combined. Fold in crushed pineapple.
-
Bake 50–60 minutes until a toothpick comes out clean. Cool in pan 15 mins, then invert onto a rack.
2. Make the Glaze:
-
In a saucepan, combine pineapple juice, sugar, and butter. Bring to a boil, then simmer 3 mins, stirring constantly. Remove from heat; stir in vanilla.
-
Soak the cake: While cake is still warm, poke holes all over with a skewer. Slowly pour glaze over the top, letting it soak in.
3. Serve:
-
Let cool completely. Garnish with toasted coconut or a dusting of powdered sugar.
✨ Tips for Success
✅ Extra moist: Use all the juice from the canned pineapple (adjust flour if batter seems too thin).
✅ No Bundt pan? Bake in a 9×13-inch pan for 35–40 mins.
✅ Storage: Keeps well covered at room temp for 3 days or refrigerated for 1 week.
