Peanut Butter Banana Baked Oatmeal Bars 🍌🥜🍯

Indulge in these soft, chewy, and protein-packed bars—perfect for breakfast, snacks, or dessert! Naturally sweetened, easy to make, and freezer-friendly.


🍽️ Ingredients

  • 2 cups rolled oats (gluten-free if needed)

  • 2 ripe bananas, mashed (~1 cup)

  • ½ cup creamy peanut butter (or almond butter)

  • ¼ cup honey or maple syrup

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • ½ tsp baking powder

  • Pinch of salt

  • ⅓ cup milk (dairy or plant-based)

  • 1 egg (or flax egg for vegan)

  • Optional mix-ins: Chocolate chips, chopped nuts, or dried fruit


👩‍🍳 Instructions

  1. Prep

    • Preheat oven to 350°F (175°C).

    • Line an 8×8-inch baking pan with parchment paper.

  2. Mix Wet Ingredients

    • In a bowl, mash bananas. Stir in peanut butter, honey, vanilla, milk, and egg.

  3. Add Dry Ingredients

    • Fold in oats, cinnamon, baking powder, and salt until combined.

    • Add mix-ins if using.

  4. Bake

    • Spread batter evenly into the pan.

    • Bake 25–30 mins until edges are golden.

    • Cool completely before slicing.

✔ Meal prep: Store in the fridge (5 days) or freezer (3 months).
✔ Extra protein: Add a scoop of vanilla protein powder.
✔ Vegan? Use flax egg and maple syrup.
