No-Sugar Energy Bars with Chocolate Glaze

Ingredients:

Base:

  • 80 g oat flakes (rolled oats)

  • 100 g raisins (or dates for extra stickiness)

  • 80 g walnuts (or any nuts/seeds you like)

  • 100 g dried apricots (chopped)

  • 1 ripe banana (mashed, for natural sweetness & binding)

Glaze:

  • 160 g sugar-free dark chocolate (at least 85% cocoa)

  • 1 tsp vegetable oil (coconut or sunflower oil works too)

Instructions:

  1. Blitz the base – In a food processor, blend oats, walnuts, raisins, and apricots until finely chopped.

  2. Add banana – Mash the banana and mix it into the dry ingredients until sticky.

  3. Press into shape – Line a small tray or dish with parchment paper, press the mixture firmly, and flatten.

  4. Freeze for 5 mins (or refrigerate for 15 mins) to set.

  5. Melt the glaze – Break chocolate into pieces, add oil, and melt (microwave in 20-sec bursts or double boiler).

  6. Coat & chill – Pour melted chocolate over the base, spread evenly, and chill until set (10-15 mins).

  7. Slice & enjoy! Cut into bars or squares.
