Ingredients (Makes ~12 bites)

75g walnuts (or almonds/cashews)

110g dates, pitted (Medjool work best)

75g dried apricots

Zest of 1 orange (or ½ tsp cinnamon)

20g sesame seeds (or chia seeds)

1 tbsp nut butter (optional, for binding)
Instructions
1. Blend

Pulse pumpkin seeds and walnuts in a food processor until finely chopped.

Add dates, apricots, and orange zest. Blend until sticky and crumbly.

2. Roll & Coat

Scoop 1-tbsp portions, roll into balls.
