No-Bake Energy Bites

No-Bake Energy Bites 🌟🍊✨

A guilt-free, 10-minute dessert packed with protein, fiber, and natural sweetness—no sugar, eggs, or flour!


Ingredients (Makes ~12 bites)

  • 50g pumpkin seeds

  • 75g walnuts (or almonds/cashews)

  • 110g dates, pitted (Medjool work best)

  • 75g dried apricots

  • Zest of 1 orange (or ½ tsp cinnamon)

  • 20g sesame seeds (or chia seeds)

  • 1 tbsp nut butter (optional, for binding)


Instructions

1. Blend

  1. Pulse pumpkin seeds and walnuts in a food processor until finely chopped.

  2. Add dates, apricots, and orange zest. Blend until sticky and crumbly.

  3. (Optional: Add 1 tbsp nut butter for extra binding.)

2. Roll & Coat

  1. Scoop 1-tbsp portions, roll into balls.

  2. Roll in sesame seeds for crunch.

3. Chill & Serve

  • Refrigerate 15 mins to firm up (or eat immediately!).


🔥 Flavor Twists:

  • Chocolate: Add 1 tbsp cocoa powder.

  • Tropical: Swap apricots for dried mango + coconut flakes.

  • Spiced: Add ginger or cardamom.
