- 1 cup (240ml) cold whole milk (or coconut milk beverage)
- 1 cup (240ml) heavy cream, whipped to stiff peaks
For the Topping:
- 1 cup (240ml) heavy cream, whipped + sweetened with 2 tbsp powdered sugar
- ½ cup (45g) toasted coconut flakes
- Lime zest or toasted coconut chips (for garnish)
Instructions
1. Make the Crust:
- Mix graham crumbs, toasted coconut, sugar, melted butter, and salt.
- Press firmly into a 9-inch pie dish. Chill 15 mins.
2. Prepare the Filling:
- Scoop out the thick coconut cream from the chilled can (reserve liquid for smoothies).
- In a bowl, whisk pudding mix + milk until thickened (~2 mins). Fold in coconut cream.
- Gently fold in whipped cream until smooth. Pour into crust.
3. Chill & Garnish:
