No Bake Coconut Cream Balls

Ingredients:

  • 1 ½ cups shredded coconut (unsweetened or sweetened, depending on preference)
  • ½ cup almond flour (or oat flour for a nut-free option)
  • ¼ cup maple syrup or honey (adjust for sweetness)
  • 2 tbsp coconut oil (melted)
  • 1 tsp vanilla extract
  • A pinch of salt
  • Extra shredded coconut (for rolling)

Optional Add-ins:

  • 1-2 tbsp cocoa powder (for chocolate flavor)
  • 1-2 tbsp peanut butter or almond butter
  • ½ tsp cinnamon

Instructions:

  1. Mix Ingredients – In a bowl, combine shredded coconut, almond flour, maple syrup, melted coconut oil, vanilla, and salt. Mix until well combined.
  2. Chill – Let the mixture sit in the fridge for 10-15 minutes to firm up slightly.
  3. Form Balls – Scoop about 1 tbsp of the mixture and roll into balls (if too sticky, wet hands lightly with water).
  4. Coat – Roll each ball in extra shredded coconut for a nice finish.
  5. Set – Place on a tray and refrigerate for at least 30 minutes to firm up.

Storage:

  • Keep in an airtight container in the fridge for up to 1 week or freeze for longer storage.
