Moist Strawberry Cake

A light, fluffy, and fruity cake packed with fresh strawberries—perfect for tea time or dessert!


Ingredients

  • 250g fresh strawberries (diced + a few extra for garnish)

  • 3 eggs, room temperature

  • 120g sugar

  • 1 packet vanilla sugar (or 1 tsp vanilla extract)

  • 100ml milk

  • 100ml vegetable oil (sunflower or canola)

  • 200g all-purpose flour

  • 1 packet baking powder (10g)

  • Pinch of salt

  • Powdered sugar (for dusting)


Instructions

1. Prep the Strawberries

  • Dice 250g strawberries (set aside a few slices for topping).

  • Toss strawberries with 1 tbsp flour (to prevent sinking in the batter).

2. Make the Batter

  1. Whisk eggs + sugar + vanilla sugar until pale and fluffy (~3 mins).

  2. Add milk + oil, mixing until combined.

  3. Sift in flour + baking powder + salt, folding gently.

  4. Fold in floured strawberries.

3. Bake

  • Pour batter into a greased 9-inch (22cm) round pan.

  • Bake at 350°F (180°C) for 40-45 mins (until a toothpick comes out clean).

  • Cool in the pan 10 mins, then transfer to a rack.

4. Serve

  • Dust with powdered sugar and top with fresh strawberry slices.


Tips for Success

🍓 Extra moist: Add 50g Greek yogurt to the batter.
🔥 Even baking: Rotate the pan halfway through.
🍰 Double the fruit: Layer strawberry slices on top before baking for a prettier finish.
