Oatmeal Breakfast Bars 🥛🥚🌾

Prep Time: 10 mins | Bake Time: 25 mins | Total Time: 35 mins
Servings: 9 bars

Ingredients

  • 1¾ cups all-purpose flour (or whole wheat flour)

  • 1 cup oats (old-fashioned or quick oats)

  • ½ cup sugar (or coconut sugar/maple syrup)

  • 1½ tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 large eggs

  • 1 cup milk (dairy or plant-based)

  • ¼ cup melted butter (or coconut oil)

  • 1 tsp vanilla extract

  • Optional Mix-ins:

    • ½ cup raisins, blueberries, or chopped apples

    • ¼ cup nuts or chocolate chips


Instructions

1. Prep the Batter:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.

  2. In a large bowl, whisk flour, oats, sugar, baking powder, cinnamon, baking soda, and salt.

  3. In another bowl, beat eggs, then add milk, melted butter, and vanilla.

  4. Pour wet ingredients into dry ingredients. Stir until just combined (don’t overmix). Fold in optional mix-ins.

2. Bake:

  1. Spread batter evenly into the pan. Bake 25–30 mins until golden and a toothpick comes out clean.

3. Serve & Store:

  1. Cool for 10 mins, then cut into squares. Serve warm or at room temperature.

  2. Store in an airtight container for up to 3 days, or freeze for 1 month.
