Mini Butter Cake

These soft, buttery, and perfectly sweet mini cakes are like little bites of heaven—simple to make and irresistibly tender!


Ingredients *(Makes 6-8 mini cakes)*

  • 100g (7 tbsp) unsalted butter, softened

  • 100g (½ cup) granulated sugar

  • 2 large eggs, room temperature

  • ½ tsp vanilla extract

  • 120g (1 cup) all-purpose flour

  • ½ tsp baking powder

  • Pinch of salt

(Optional: Powdered sugar for dusting or a drizzle of glaze!)


Instructions

1. Prep & Preheat

  • Preheat oven to 350°F (175°C).

  • Grease a 6-cup muffin tin or use silicone molds for easy removal.

2. Make the Batter

  1. Cream butter and sugar until light and fluffy (~3 mins).

  2. Beat in eggs one at a time, then add vanilla.

  3. Sift in flour, baking powder, and salt, mixing just until combined (don’t overmix!).

3. Bake

  • Divide batter into molds (fill ¾ full).

  • Bake 15-18 minutes until golden and a toothpick comes out clean.

4. Serve

  • Cool 5 minutes in the pan, then transfer to a rack.

  • Dust with powdered sugar or drizzle with vanilla glaze (mix ½ cup powdered sugar + 1 tbsp milk).
