Million Dollar Roast Beef Tenderloin 🥩✨

Ingredients

For the Tenderloin:

  • 1 (3-4 lb) beef tenderloin, trimmed and tied

  • 2 tbsp olive oil

  • 2 tsp kosher salt

  • 1 tsp black pepper

  • 4 tbsp unsalted butter, softened

For the Million Dollar Crust:

  • 4 tbsp Dijon mustard

  • 2 tbsp Worcestershire sauce

  • 3 cloves garlic, minced

  • 2 tbsp fresh rosemary, finely chopped

  • 2 tbsp fresh thyme, finely chopped

  • ½ cup panko breadcrumbs (or almond flour for keto)

  • ¼ cup grated Parmesan cheese

  • 2 tbsp melted butter

Optional Sauce:

  • ½ cup red wine (or beef broth)

  • 1 cup heavy cream

  • 1 tsp Dijon mustard


Instructions

1. Prep the Tenderloin

  • Preheat oven to 425°F (220°C).

  • Pat the tenderloin dry and rub with olive oil, salt, and pepper.

  • Sear in a large skillet over high heat for 2-3 mins per side until deeply browned. Transfer to a roasting pan.

2. Make the Crust

  • In a bowl, mix Dijon, Worcestershire, garlic, rosemary, and thyme. Spread evenly over the seared tenderloin.

  • In another bowl, combine panko, Parmesan, and melted butter. Press onto the mustard layer.

3. Roast to Perfection

  • Roast for 25-35 mins (for medium-rare, 120°F internal temp) or until desired doneness:

    • 120°F (49°C): Rare

    • 130°F (54°C): Medium-rare (recommended)

    • 140°F (60°C): Medium

  • Rest for 15 mins before slicing.

4. Optional Pan Sauce

  • Deglaze the skillet with red wine, simmer until reduced by half.

  • Add heavy cream and Dijon, simmer until thickened (5 mins). Strain and serve with the tenderloin.
