 Mexican Chicken Pinwheels recipe that’s perfect for parties, meal prep, or a flavorful snack! These creamy, spicy roll-ups are packed with bold Mexican flavors and are easy to customize.

Ingredients:

For the Filling:

  • 2 cups cooked chicken, shredded or finely chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream
  • ¼ cup diced green chiles (canned or fresh)
  • ¼ cup chopped cilantro
  • 2 tbsp taco seasoning (or 1 tsp each chili powder, cumin, paprika)
  • 1 tsp garlic powder
  • 1 tsp lime juice
  • Salt & pepper to taste

For Assembly:

  • 4 large flour tortillas (10-inch, or use low-carb wraps for keto)
  • ½ cup diced tomatoes, drained (optional)
  • ½ cup sliced black olives (optional)
  • 1 jalapeño, finely diced (optional for heat)

Instructions:

1. Make the Filling:

  • In a bowl, mix cream cheese, sour cream, taco seasoning, garlic powder, lime juice, salt & pepper until smooth.
  • Fold in chicken, shredded cheese, green chiles, cilantro, tomatoes, olives, and jalapeño (if using).

2. Assemble the Pinwheels:

  • Spread ¼ of the mixture evenly over each tortilla, leaving a small border at the edges.
  • Roll up tightly (like a sushi roll). Wrap each in plastic wrap and chill for 1-2 hours (or freeze for 20 mins to firm up).

3. Slice & Serve:

  • Unwrap and trim the ends. Cut into 1-inch slices with a sharp knife.
  • Arrange on a platter and garnish with extra cilantro or lime wedges.
