Melt-in-Your-Mouth Vanilla Sponge Cake 🍰✨

This ultra-light, buttery cake is so tender it practically dissolves on your tongue! Perfect with tea, berries, or a dusting of powdered sugar.


📝 Ingredients (8–10 slices):

  • 4 large eggs, room temp

  • 1 cup (200g) granulated sugar

  • 1 cup (120g) all-purpose flour (sifted)

  • ½ cup (120ml) whole milk, lukewarm

  • ½ cup (115g) unsalted butter, melted & cooled

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • Zest of 1 lemon (optional, for brightness)

  • Pinch of salt


🍴 Instructions:

1. Prep & Mix

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round pan or line with parchment.

  2. In a bowl, whip eggs and sugar with a mixer for 5–7 mins until pale, thick, and tripled in volume.

  3. Gently fold in sifted flour + baking powder in 3 parts, alternating with milk and melted butter. Add vanilla and lemon zest.

2. Bake to Perfection

  • Pour batter into the pan. Bake 25–30 mins until golden and a toothpick comes out clean.

  • Key tip: Do NOT open the oven early—this cake is delicate!

3. Serve

  • Cool 10 mins in the pan, then transfer to a rack.

  • Dust with powdered sugar or top with whipped cream & fresh berries.


💡 Why This Cake Melts:

  • No heavy fats: Butter is just enough for tenderness.

  • Eggs whipped to ribbons = airy texture.

  • Lukewarm milk prevents batter from seizing.

Pair with: ☕ Tea, 🍓 strawberry compote, or a drizzle of lemon glaze (mix 1 cup powdered sugar + 2 tbsp lemon juice).

Variation: Swap lemon zest for orange zest + 1 tsp cinnamon for a cozy twist!
