-
2 egg yolks
-
2 tbsp (25g) sugar
-
1 tbsp (8g) cornstarch

1 tsp (5ml) vanilla extract
Instructions:
1. Make the Donut Holes:
-
Prep: Preheat oven to 350°F (175°C). Grease a mini muffin tin or use a silicone mold.
-
Mix dry ingredients: Whisk flour and baking soda in a bowl.
-
Mix wet ingredients: In another bowl, beat egg and sugar until pale. Add jam, melted butter, vinegar, and milk. Mix well.
-
Combine: Gently fold wet ingredients into dry until just combined (don’t overmix).
-
Bake: Spoon batter into molds (¾ full). Bake 12-15 mins until golden and springy.
2. Malva Glaze (Optional):
While donuts bake, heat sugar, cream, butter, water, and vanilla in a saucepan until melted. Brush generously over warm donut holes for a sticky-sweet finish.
3. Custard Dipping Sauce:
-
Heat milk in a saucepan until steaming (not boiling).
-
Whisk egg yolks, sugar, and cornstarch in a bowl.
-
Slowly pour hot milk into egg mix, whisking constantly.
-
Return to low heat and stir until thickened (3-4 mins). Remove, add vanilla, and cool.
Serving:
-
Serve donut holes warm with custard sauce for dipping.
-
Dust with powdered sugar or cinnamon for extra flair.
Tips:
🔥 Stickier Donuts? Double the glaze and soak them while hot.
🍮 Custard Shortcut: Use instant custard powder if pressed for time.
🍯 Jam Swap: Replace apricot with orange marmalade for a citrusy twist.
