1 large egg
Cinnamon Filling:

2 tbsp melted butter

3 tbsp granulated erythritol (or monk fruit blend)

Cream Cheese Frosting (Optional):

2 oz cream cheese, softened

2 tbsp powdered erythritol

1 tsp vanilla extract

1 tbsp heavy cream
Instructions
1. Make the Dough

In a microwave-safe bowl, melt mozzarella + cream cheese (60 sec, stir halfway).

Add almond flour, coconut flour, baking powder, and egg. Mix until a dough forms (use hands if sticky).
2. Roll & Fill

Place dough between two parchment sheets. Roll into a 10×12-inch rectangle.

Brush with melted butter, then sprinkle erythritol + cinnamon.
3. Cut & Bake

Tightly roll into a log. Slice into 8 even pieces.

Place in a greased pan. Bake at 350°F (175°C) for 18-20 mins until golden.
