Low-Carb, Keto Cinnamon Buns 🍥✨

*Soft, gooey, and sugar-free—with just 3g net carbs per bun!*


Ingredients (Makes 8 buns)

Dough:

  • 1½ cups (150g) shredded mozzarella (low-moisture)

  • 2 oz (60g) cream cheese

  • 1 cup (100g) almond flour

  • 1 tbsp (8g) coconut flour

  • 1 tbsp baking powder

  • 1 large egg

Cinnamon Filling:

  • 2 tbsp melted butter

  • 3 tbsp granulated erythritol (or monk fruit blend)

  • 1 tbsp cinnamon

Cream Cheese Frosting (Optional):

  • 2 oz cream cheese, softened

  • 2 tbsp powdered erythritol

  • 1 tsp vanilla extract

  • 1 tbsp heavy cream


Instructions

1. Make the Dough

  1. In a microwave-safe bowl, melt mozzarella + cream cheese (60 sec, stir halfway).

  2. Add almond flour, coconut flour, baking powder, and egg. Mix until a dough forms (use hands if sticky).

2. Roll & Fill

  1. Place dough between two parchment sheets. Roll into a 10×12-inch rectangle.

  2. Brush with melted butter, then sprinkle erythritol + cinnamon.

3. Cut & Bake

  1. Tightly roll into a log. Slice into 8 even pieces.

  2. Place in a greased pan. Bake at 350°F (175°C) for 18-20 mins until golden.

4. Frost (Optional)

  • Whip frosting ingredients until smooth. Drizzle over warm buns.


Tips

🔥 Extra fluffy: Let dough rest 5 mins before rolling.
🍯 Sticky fix: Wet hands to handle dough easily.
🚫 No microwave? Melt cheeses in a double boiler.
