Key Lime Pound Cake 🍋🍰

Zesty, moist, and topped with a tangy lime glaze!

Ingredients:

For the Cake:

  • 3 cups (360g) all-purpose flour

  • 2 cups (400g) granulated sugar

  • 1 cup (226g) unsalted butter, softened

  • 4 large eggs, room temperature

  • ½ cup (120ml) sour cream (or Greek yogurt)

  • ½ cup (120ml) key lime juice (or regular lime juice)

  • 2 tbsp lime zest (from about 4 limes)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp vanilla extract

For the Lime Glaze:

  • 1 cup (120g) powdered sugar

  • 2–3 tbsp key lime juice (adjust for thickness)

  • 1 tsp lime zest


Instructions:

  1. Prep:

    • Preheat oven to 350°F (175°C).

    • Grease and flour a 10-12 cup Bundt pan (or loaf pans).

  2. Make the Cake:

    • In a bowl, whisk flour, baking powder, baking soda, and salt. Set aside.

    • In a large bowl, cream butter and sugar until light and fluffy (3–4 mins).

    • Beat in eggs, one at a time, then mix in sour cream, lime juice, zest, and vanilla.

    • Gradually add the dry ingredients, mixing just until combined (do not overmix).

  3. Bake:

    • Pour batter into the prepared pan.

    • Bake for 50–60 mins (or until a toothpick comes out clean).

    • Cool in the pan for 15 mins, then transfer to a wire rack.

  4. Glaze:

    • Whisk powdered sugar, lime juice, and zest until smooth.

    • Drizzle over the cooled cake.

  5. Serve:

    • Garnish with extra lime zest or slices.
