Italian Love Cake

Italian Love Cake ❤️🍫

A showstopping dessert with three luscious layers: moist chocolate cake, sweet ricotta filling, and fluffy chocolate pudding whipped cream.


Ingredients

For the Cake Layer:

  • 1 box (15.25 oz) chocolate cake mix (plus eggs/oil/water as listed on box)

For the Ricotta Layer:

  • 2 lbs (32 oz) ricotta cheese, whole milk for creaminess

  • 4 large eggs

  • ¾ cup (150g) granulated sugar

  • 1 tsp vanilla extract

For the Topping:

  • 1 box (3.9 oz) instant chocolate pudding mix

  • 1½ cups (360ml) cold milk

  • 1 container (8 oz) whipped topping (e.g., Cool Whip)

(Optional: Chocolate shavings or strawberries for garnish!)


Instructions

1. Prep & Bake the Cake

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Prepare chocolate cake batter as directed on the box. Pour into the dish.

2. Make the Ricotta Layer

  1. In a bowl, beat ricotta, eggs, sugar, and vanilla until smooth.

  2. Carefully spoon over cake batter (do not mix—it will sink slightly).

3. Bake

  • Bake 50-60 mins until ricotta layer is set (center should jiggle slightly). Cool completely.

4. Add the Pudding Topping

  1. Whisk pudding mix + milk for 2 mins until thick. Fold in whipped topping.

  2. Spread over cooled cake. Chill 4+ hours (overnight is best!).
