Homemade McGriddle Recipe

Ingredients:

For the Pancakes (Maple Syrup Pockets):

  • 1 cup all-purpose flour

  • 1 tbsp sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup buttermilk (or regular milk + 1 tsp vinegar)

  • 1 egg

  • 2 tbsp melted butter

  • 1 tsp vanilla extract

  • Maple syrup (for pockets)

For the Filling:

  • 2 sausage patties (or breakfast sausage, shaped into patties)

  • 2 eggs (scrambled or folded)

  • 2 slices American cheese (or cheddar)

  • Butter (for cooking)

Instructions:

1. Make the Pancakes (McGriddle Buns):

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  2. In another bowl, mix buttermilk, egg, melted butter, and vanilla.

  3. Pour wet ingredients into dry ingredients and stir until just combined (small lumps are okay).

  4. Heat a griddle or pan over medium-low heat and lightly grease with butter.

  5. Pour small circles of batter (about 4 inches wide) onto the griddle.

  6. While the pancakes cook, drizzle a small amount of maple syrup directly onto the wet batter (this creates the signature syrup pockets).

  7. When bubbles form on top, flip and cook until golden brown. Set aside.

2. Cook the Sausage & Eggs:

  • Sausage: Shape sausage into thin patties and cook in a skillet over medium heat until browned and fully cooked (about 3-4 minutes per side).

  • Eggs: Scramble or make a small folded egg patty (like McDonald’s style) in the same pan.

3. Assemble the McGriddle:

  1. Place a slice of cheese on one pancake.

  2. Add the sausage patty.

  3. Top with the cooked egg.

  4. Place the second pancake on top (syrup-side down).

  5. Press gently to melt the cheese.

4. Serve Warm!

Enjoy your homemade McGriddle with extra maple syrup if desired.

Tips:

  • For extra flavor, add a little brown sugar to the pancake batter.

  • Use maple extract in the pancake batter for a stronger maple taste.

  • Make a batch ahead and freeze (reheat in the microwave or toaster oven).
