  • ½ cup (100g) brown sugar (or coconut sugar)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp salt

Wet Ingredients

  • ½ cup (115g) melted butter (or coconut oil)

  • 2 eggs, room temp

  • ½ cup (120ml) orange juice (fresh or bottled)

  • 1 tsp vanilla extract

Mix-Ins

  • 1 cup mixed dried fruits (raisins, chopped dates, cranberries, cherries)

  • ½ cup chopped nuts (walnuts, almonds, or pecans)

  • Zest of 1 orange (optional, for brightness)

👩‍🍳 Instructions

1. Prep Fruits & Nuts

  • Toss dried fruits with 1 tbsp flour (prevents sinking).

2. Make the Batter

  1. Whisk flour, sugar, baking powder, baking soda, spices, and salt.

  2. In another bowl, mix melted butter, eggs, orange juice, and vanilla.

  3. Combine wet + dry ingredients, then fold in floured fruits, nuts, and zest.

3. Bake

  • Pour into a greased 8×4-inch loaf pan (or round cake pan).

  • Bake at 350°F (175°C) for 45-55 mins until a toothpick comes out clean.

  • Cool in pan 10 mins, then transfer to a rack.

💡 Pro Tips

✔ Extra moist? Brush warm cake with orange syrup (2 tbsp juice + 1 tbsp honey).
✔ No eggs? Use 2 tbsp yogurt or a flax egg.
✔ Storage: Keeps for 5 days wrapped at room temp, or freeze for 2 months.

🍵 Serving Ideas

  • Top with cream cheese frosting or a dusting of powdered sugar.

  • Serve with hot chai or spiced cider.

Cozy, fruity, and full of flavor!
