Hennessy Peach Cobbler Cheesecake 🍑🥃🍰

A boozy, Southern-inspired masterpiece—creamy cheesecake meets spiced peaches and a buttery crust!

Ingredients

For the Crust:

  • 1½ cups graham cracker crumbs (about 10-12 sheets)

  • ¼ cup brown sugar

  • ½ tsp cinnamon

  • 6 tbsp melted butter

  • 1 tbsp Hennessy (optional, but recommended!)

For the Peach Cobbler Layer:

  • 3 cups fresh peaches, diced (or 2 cans drained)

  • ¼ cup brown sugar

  • 2 tbsp Hennessy

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • 1 tbsp cornstarch (to thicken)

For the Cheesecake Filling:

  • 24 oz (3 blocks) cream cheese, softened

  • 1 cup granulated sugar

  • ½ cup sour cream

  • 3 large eggs, room temp

  • ¼ cup Hennessy

  • 2 tsp vanilla extract

  • 1 tbsp all-purpose flour (for stability)

For the Topping (Optional):

  • Whipped cream

  • Caramel drizzle

  • Extra peach slices


Instructions

1. Make the Crust

  1. Preheat oven to 325°F (165°C).

  2. Mix graham crumbs, brown sugar, cinnamon, melted butter, and Hennessy. Press into a 9-inch springform pan (up the sides slightly).

  3. Bake for 10 mins, then cool.

2. Cook the Peach Cobbler Layer

  1. In a saucepan, combine peaches, brown sugar, Hennessy, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch.

  2. Simmer for 5-7 mins until thickened. Let cool slightly.

3. Prepare the Cheesecake Filling

  1. Beat cream cheese + sugar until smooth.

  2. Add sour cream, eggs (one at a time), Hennessy, vanilla, and flour. Mix just until combined (don’t overbeat).

4. Assemble & Bake

  1. Spread half the cheesecake batter over the crust.

  2. Spoon half the peach mixture over the batter. Repeat layers, swirling gently.

  3. Bake for 50-60 mins until edges are set but center jiggles slightly.

  4. Turn off oven, crack the door, and let cool 1 hour inside to prevent cracking.

5. Chill & Serve

  1. Refrigerate at least 4 hours (overnight best).

  2. Top with whipped cream, caramel, and extra peaches.
