Hearty Cabbage Soup with Ground Meat

Ingredients:

  • 1 tbsp oil (or butter)

  • 1 lb (450g) ground beef, pork, or turkey

  • 1 onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 3 garlic cloves, minced

  • 1 small green cabbage, shredded (~4 cups)

  • 1 can (14 oz) diced tomatoes (or fresh)

  • 6 cups beef or vegetable broth

  • 1 tsp paprika (or smoked paprika)

  • 1 tsp dried thyme

  • Salt & pepper to taste

  • Optional: Potatoes, bay leaf, pinch of chili flakes

Instructions:
1️⃣ Brown the meat: In a large pot, heat oil over medium heat. Cook the ground meat until browned. Drain excess fat if needed.
2️⃣ Sauté veggies: Add onion, carrots, and celery. Cook for 5 mins until softened. Stir in garlic.
3️⃣ Add cabbage & broth: Toss in shredded cabbage, tomatoes, broth, and spices. Bring to a boil.
4️⃣ Simmer: Reduce heat, cover, and simmer for 20–25 mins until cabbage is tender.
5️⃣ Season & serve: Adjust salt/pepper. Garnish with fresh parsley or a dollop of sour cream.
