Healing Chicken Feet Soup

(Rich in Collagen, Good for Joints & Immunity)

This nourishing Chinese-style chicken feet soup is packed with natural gelatin, protein, and minerals—known in traditional medicine to support joint health, skin elasticity, and gut healing.


Ingredients

  • 12-15 chicken feet (cleaned, nails trimmed)

  • 1 tbsp vinegar (helps extract collagen)

  • 1-inch ginger, sliced

  • 3 garlic cloves, smashed

  • 8 cups water (or chicken broth)

  • 1 dried shiitake mushroom (optional, for umami)

  • 1 carrot, chopped

  • 1 corn cob, cut into chunks (optional, for sweetness)

  • 5 red dates (or goji berries)

  • 1 tsp salt (adjust to taste)

  • Green onions, chopped (for garnish)

Optional Add-Ins:

  • Astragalus root (immune-boosting)

  • Dang shen (Codonopsis) (for energy)

  • Black peppercorns (warming)


Instructions

  1. Prep Chicken Feet:

    • Blanch feet in boiling water for 2 minutes to remove impurities. Drain and rinse.

  2. Simmer Soup:

    • In a pot, combine chicken feet, vinegar, ginger, garlic, and water.

    • Bring to a boil, then reduce heat to low. Skim off any foam.

    • Add shiitake, carrot, corn, and dates.

    • Cover and simmer 2-3 hours (or 4-6 hours in a slow cooker) until broth is milky and rich.

  3. Season & Serve:

    • Discard ginger/garlic if desired. Add salt to taste.

    • Garnish with green onions.
