Ground Turkey Sweet Potato Skillet

Ingredients

1 lb (450g) lean ground turkey

1 large onion, diced

3 cloves garlic, minced

2 medium sweet potatoes, peeled & diced (½-inch cubes)

2 cups fresh spinach (or kale)

1 tsp paprika (smoked or sweet)

1 tsp chili powder
-
1 tsp cumin
-
½ tsp oregano
-
Salt & pepper, to taste

Instructions
1. Cook the Turkey & Aromatics

Heat oil in a large skillet over medium-high heat.

Add onion, sauté for 3 mins until soft.

Add garlic, cook 30 secs until fragrant.

Add ground turkey, breaking it up. Cook 5-6 mins until browned.
2. Add Sweet Potatoes & Spices

Stir in sweet potatoes, paprika, chili powder, cumin, oregano, salt, and pepper.

Reduce heat to medium, cover, and cook 12-15 mins, stirring occasionally, until potatoes are tender.
3. Finish with Spinach

Add spinach, stir until wilted (1-2 mins).

Taste and adjust seasoning.
4. Serve

Top with avocado, herbs, or cherry tomatoes for freshness.
