Grandma’s Peach Cobbler Pie 🍑✨
A buttery, old-fashioned dessert with juicy peaches and a golden crust—just like grandma used to make!

Ingredients

(Serves 8 | Prep: 20 mins | Bake: 45 mins)

For the Filling:

  • 6 cups fresh peaches (peeled & sliced, about 6-7 peaches)

  • ¾ cup granulated sugar (adjust to taste)

  • 2 tbsp brown sugar

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • 2 tbsp cornstarch (or flour, to thicken)

  • ½ tsp cinnamon

  • ¼ tsp nutmeg (optional)

  • Pinch of salt

For the Cobbler Topping:

  • 1 cup all-purpose flour

  • ¼ cup granulated sugar + 1 tbsp for sprinkling

  • 1 tsp baking powder

  • ½ tsp salt

  • 6 tbsp cold butter, cubed

  • ¼ cup boiling water

Optional Add-Ins:

  • 1 tbsp bourbon (for depth)

  • ½ tsp almond extract (for nutty flavor)


Instructions

  1. Prep the Peaches

    • Toss sliced peaches with sugars, lemon juice, vanilla, cornstarch, cinnamon, nutmeg, and salt. Let sit 15 mins to macerate.

  2. Preheat & Assemble

    • Preheat oven to 375°F (190°C).

    • Pour peach mixture into a 9-inch pie dish or deep baking dish.

  3. Make the Cobbler Crust

    • In a bowl, whisk flour, sugar, baking powder, and salt.

    • Cut in cold butter with a pastry cutter (or fingers) until crumbly.

    • Stir in boiling water just until a shaggy dough forms.

  4. Top & Bake

    • Drop spoonfuls of dough over peaches (don’t over-spread—rustic is good!).

    • Sprinkle with 1 tbsp sugar for a crispy top.

    • Bake 40-45 mins until bubbly and golden.

  5. Serve Warm

    • Let cool 10 mins, then serve with vanilla ice cream or whipped cream.

🍑 Use ripe but firm peaches (soft ones turn mushy).
🔥 Bake on a sheet tray to catch drips!
