🍗 Grandma’s Crispy Chicken Strips

✨ Ingredients:

  • 2 large chicken breasts, sliced into strips

  • 3 eggs, beaten

  • 2 garlic cloves, minced (or 1 tsp garlic powder)

  • 2 tbsp cornstarch (or flour for classic coating)

  • 2 tbsp your favorite spices (try: 1 tsp paprika + ½ tsp onion powder + ½ tsp black pepper + pinch of cayenne)

  • Oil for frying (vegetable, canola, or peanut oil)

  • Fresh lettuce, for serving

  • Optional: ¼ cup grated Parmesan cheese for extra crunch!

🔥 Crispy Perfection in 3 Steps:

1️⃣ Marinate (5 mins):

  • Toss chicken strips with minced garlic and a pinch of salt. Let sit while you prep the coating.

2️⃣ Double-Dip for Extra Crunch:

  • 1st bowl: Beat eggs + 1 tbsp water.

  • 2nd bowl: Mix cornstarch + spices (and Parmesan, if using).

  • Dip each strip: Egg → Spice Mix → Egg → Spice Mix (double coating = EXTRA CRISPY!).

3️⃣ Fry to Golden Glory:

  • Heat ½ inch oil in a skillet over medium-high (350°F).

  • Fry strips 2-3 mins per side until deep golden. Drain on a wire rack or paper towels.

🍽️ Serving Ideas:

  • Classic: On a bed of lettuce with honey mustard or ranch.

  • Grandma’s Way: With mashed potatoes & gravy.

  • Healthy Twist: In a wrap with avocado & Greek yogurt sauce.

💡 Pro Tips:

  • No deep fryer? Air fry at 400°F for 10-12 mins (spray with oil first).

  • Make it gluten-free: Use all cornstarch or almond flour.

  • Kid-friendly: Skip the cayenne and serve with ketchup.

WHY THIS RECIPE WORKS:
✅ Double-coating = ULTRA-CRISPY (just like Grandma’s!).
✅ Garlic + spices add flavor without needing buttermilk marinade.
✅ Fries fast—no soggy breading!

Fun Fact: The cornstarch trick comes from Chinese frying techniques—it gives a lighter, crispier crunch than flour! 🌟

Let me know if you want a baked version—I’ve got a secret for keeping them juicy! 😉
