Golden Vanilla Mini Loaves

Buttery, tender, and perfumed with pure vanilla—these petite loaves are perfect for gifting or afternoon tea!


Ingredients (Makes 4 mini loaves)

  • 2 cups all-purpose flour

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup unsalted butter, softened

  • 1¼ cups granulated sugar

  • 3 large eggs, room temp

  • 1 tbsp pure vanilla extract (or 1 vanilla bean scraped)

  • ½ cup sour cream or full-fat Greek yogurt

Optional Add-Ins:

  • 1 tsp lemon zest (for brightness)

  • ½ cup white chocolate chips or sprinkles


Instructions

  1. Prep:

    • Preheat oven to 350°F (175°C). Grease 4 mini loaf pans (5.75″ x 3″).

    • Whisk flour, baking powder, baking soda, and salt in a bowl.

  2. Cream Butter & Sugar:

    • Beat butter and sugar for 3-4 mins until light and fluffy.

    • Add eggs one at a time, then vanilla, mixing well after each.

  3. Combine:

    • Alternate adding dry ingredients and sour cream, beginning and ending with flour.

    • Fold in add-ins (if using).

  4. Bake:

    • Divide batter evenly into pans (fill ¾ full).

    • Bake 25-30 mins until golden and a toothpick comes out clean.

    • Cool in pans 10 mins, then transfer to a rack.
