Fruit Pizza Cookies 🍪🍓

A vibrant, fun twist on classic fruit pizza! Buttery sugar cookies topped with creamy frosting and fresh fruit—perfect for parties, summer BBQs, or a sweet snack.

Ingredients

For the Sugar Cookies:

  • 1 cup (225g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2½ cups (315g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

For the Frosting:

  • 8 oz (225g) cream cheese, softened
  • ½ cup (60g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (240ml) whipped cream (or Cool Whip)

For the Fruit Topping:

  • Assorted fresh fruit: strawberries, kiwi, blueberries, raspberries, mango
  • Optional glaze: 2 tbsp apricot jam + 1 tsp water (heated & brushed on fruit)

Instructions

1. Bake the Cookies:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  2. Cream butter + sugar until fluffy. Add egg + vanilla.
  3. Mix in flour, baking powder, and salt until dough forms.
  4. Roll into 1½-inch balls, flatten slightly, and bake 8-10 mins until edges are golden. Cool completely.

2. Make the Frosting:

  • Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.

3. Assemble:

  1. Spread frosting on cooled cookies.
  2. Top with fruit in creative patterns (or let kids decorate!).
  3. Brush with warm apricot glaze (optional, for shine).
