Fluffy Pancakes with Ham & Green Onions

Savory, fluffy, and packed with smoky ham and fresh green onions—perfect for breakfast or brunch!


Ingredients (serves 2–3):

For the Pancakes:

  • 1 cup (125g) all-purpose flour

  • 1 tbsp sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ¾ cup (180ml) buttermilk (*or milk + 1 tsp vinegar*)

  • 1 large egg

  • 2 tbsp melted butter (or oil)

  • ½ cup (60g) diced ham

  • ¼ cup (25g) chopped green onions

  • 1/4 tsp garlic powder (optional)

For Serving (optional):

  • Fried or poached egg

  • Extra green onions

  • Sriracha or maple syrup


Instructions:

  1. Mix Dry Ingredients:

    • Whisk together flour, sugar, baking powder, baking soda, salt, and garlic powder in a bowl.

  2. Combine Wet Ingredients:

    • In another bowl, whisk buttermilk, egg, and melted butter.

  3. Make the Batter:

    • Pour wet ingredients into dry ingredients and stir just until combined (lumps are okay!).

    • Fold in diced ham and green onions.

  4. Cook the Pancakes:

    • Heat a non-stick skillet or griddle over medium-low heat and lightly grease.

    • Pour ¼ cup batter per pancake. Cook until bubbles form on top (~2–3 mins), then flip and cook another 1–2 mins.

  5. Serve Hot:

    • Stack and top with a runny egg, extra green onions, or a drizzle of sriracha/maple syrup for sweet-savory contrast.


Tips:

🔥 Extra Fluffy: Let the batter rest for 5 mins before cooking.
🧀 Cheesy Twist: Add shredded cheddar to the batter.
🥓 Substitutions: Swap ham for crispy bacon or sautéed mushrooms.
