Flourless & Sugar-Free Carrot and Orange Cake

This healthy twist on classic carrot cake uses almond flour, oats, and dates for sweetnessâno refined sugar or wheat! The orange adds a bright, citrusy note.
Ingredients
Dry Ingredients:

2 cups finely grated carrots (packed)

1 cup almond flour (or hazelnut flour)

½ cup ground oats (oat flour, or more almond flour)

1 tsp cinnamon

½ tsp ground ginger
-
Ÿ tsp nutmeg

1 tsp baking powder
-
Pinch of salt
Wet Ingredients:

1 cup pitted dates, soaked in warm water (10 mins), drained

3Â large eggs, room temperature

Zest of 1 orange
-
2 tbsp fresh orange juice
-
1 tsp vanilla extract
-
Ÿ cup melted coconut oil (or olive oil)
(Optional add-ins: ½ cup chopped walnuts, raisins, or shredded coconut.)
Instructions
1. Prep & Preheat:

Preheat oven to 350°F (175°C). Grease a 7-inch round pan or line with parchment.

Blend soaked dates with orange juice, eggs, vanilla, and oil until smooth (a food processor works best).
2. Mix Dry & Wet:

In a bowl, whisk almond flour, oat flour, spices, baking powder, and salt.

Fold in grated carrots, orange zest, and date mixture. Add nuts if using.
3. Bake:

Pour batter into the pan. Bake 35-40 mins until a toothpick comes out clean.

Cool 15 mins before slicing.
