Egg Salad Sandwich

Classic comfort in every bite—creamy, crunchy, and perfectly satisfying!

Ingredients:

  • 6 large eggs, hard-boiled and peeled

  • ¼ cup mayonnaise (or Greek yogurt for a lighter option)

  • 1 tbsp Dijon mustard (or yellow mustard)

  • 1 tbsp fresh lemon juice or vinegar

  • 2 tbsp red onion or green onion, finely chopped

  • 1 celery stalk, finely diced (for crunch)

  • 1 tbsp fresh dill or chives, chopped

  • ½ tsp salt, or to taste

  • ¼ tsp black pepper

  • ¼ tsp paprika (optional)

  • 8 slices bread (whole wheat, sourdough, or croissants)

  • Lettuce leaves or sprouts (for serving)

Instructions:

  1. Prep eggs: Chop or mash hard-boiled eggs to your preferred texture (chunky or smooth).

  2. Mix: In a bowl, combine eggs, mayonnaise, mustard, lemon juice, onion, celery, herbs, salt, and pepper.

  3. Chill: Cover and refrigerate for 15+ minutes to let flavors blend.

  4. Assemble: Spread egg salad on bread, add lettuce, and top with another slice. Cut diagonally for a classic touch.

Serving Ideas:

  • Pair with pickles, chips, or a simple side salad.

  • Serve on croissants for a decadent twist.

  • Sprinkle with extra paprika or herbs for garnish.

Tips:

  • For creamier texture, add 1 tbsp more mayo.

  • For smokiness, add a pinch of smoked paprika or crumbled bacon.

  • Use day-old bread to prevent sogginess.
