Easy Foil-Pan Sausages with Caramelized Onions & Glaze

Juicy bratwurst or sausages baked to perfection with sweet onions and a sticky-savory glaze—minimal cleanup!


🌭 Ingredients *(Serves 4-6)*

  • 6 raw bratwurst or similar sausages (or pre-cooked, see notes)

  • 2 large onions, thinly sliced

  • 2 tbsp butter or olive oil

  • ½ cup beer, apple juice, or broth (for steam & flavor)

  • 2 tbsp whole-grain mustard

  • 2 tbsp honey or maple syrup

  • 1 tbsp soy sauce

  • 1 tsp thyme (or rosemary)

  • Salt & pepper to taste

  • Hoagie rolls or sauerkraut (for serving)


👨‍🍳 Instructions

1️⃣ Prep & Layer:

  • Preheat oven to 375°F (190°C).

  • Line a large foil pan (or baking dish) with heavy-duty foil.

  • Scatter onions in the pan, dot with butter, and pour in beer/juice.

2️⃣ Add Sausages & Glaze:

  • Nestle sausages into the onions.

  • Whisk mustard, honey, soy sauce, and thyme; brush half over sausages.

3️⃣ Bake:

  • Cover tightly with foil and bake 25 mins.

  • Uncover, flip sausages, and brush with remaining glaze.

  • Bake 15-20 mins more until caramelized.

4️⃣ Serve:

  • Pile onto rolls with onions, or plate with mashed potatoes.


💡 Pro Tips

✔ Pre-cooked sausages? Reduce initial bake to 15 mins covered.
✔ Extra crispy? Broil 2-3 mins at the end.
✔ No pan? Make a foil packet—seal edges tightly!
