4 bone-in pork chops (or boneless, ¾-inch thick)

4 medium potatoes, diced (Yukon Gold or Russet)

1 small onion, sliced

3 garlic cloves, minced

2 tbsp olive oil

1 tsp paprika

1 tsp dried thyme (or rosemary)

½ tsp garlic powder

½ tsp salt

½ cup chicken broth (or water)

2 tbsp fresh parsley, chopped

Instructions

Season & Sear Chops:

Pat chops dry, then rub with paprika, thyme, garlic powder, salt, and pepper.

Sear chops 2-3 mins per side until golden. Remove and set aside.

Add remaining 1 tbsp oil to the skillet.

Sauté potatoes and onions for 5 mins, stirring occasionally.

Return chops to the skillet, nestling them into the potatoes.
