 Easter Jello Cookies (Soft, Chewy & Colorful!)

These fun, fruity cookies are bursting with bright Easter colors and a tangy Jello flavor—perfect for Easter baskets, brunch, or kids’ baking!


🌈 Ingredients (Makes 24 cookies)

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 (3 oz) box Jello powder (any Easter color/flavor: strawberry, lime, lemon, berry blue)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • Extra sugar for rolling

  • Pastel sprinkles
  • White chocolate drizzle

1️⃣ Prep:

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment.

  • Roll dough into 1-inch balls, then coat in sugar.
  • Place 2 inches apart; flatten slightly with a glass.
  • Bake 8-10 mins (edges should just start to brown).

5️⃣ Decorate:

  • Cool 5 mins, then add sprinkles or drizzle with melted white chocolate.
