Double Chocolate Coca-Cola Cake

A rich, moist, and fudgy chocolate cake with a unique Coca-Cola twist—no mixer needed!


🍫 Ingredients

For the Cake:

  • 1 cup Coca-Cola (do not use diet)

  • ½ cup vegetable oil

  • 1 stick (½ cup / 115g) unsalted butter

  • 3 Tbsp cocoa powder (unsweetened)

  • 2 cups (400g) granulated sugar

  • 2 cups (250g) all-purpose flour

  • ½ tsp salt

  • 2 large eggs

  • ½ cup (120ml) buttermilk (or ½ cup milk + ½ Tbsp vinegar)

  • 1 tsp baking soda

  • 1 tsp vanilla extract

For the Chocolate Frosting (Optional but Highly Recommended!):

  • ½ stick (¼ cup / 57g) butter

  • 3 Tbsp cocoa powder

  • 6 Tbsp Coca-Cola

  • 3 cups (360g) powdered sugar

  • 1 tsp vanilla extract

  • ½ cup (60g) chopped pecans or walnuts (optional)


📝 Instructions

1. Make the Cake:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.

  2. Mix wet ingredients: In a saucepan, combine Coca-Cola, oil, butter, and cocoa powder. Heat over medium until butter melts, stirring occasionally. Remove from heat.

  3. Add sugar & dry ingredients: Pour the warm mixture into a large bowl. Whisk in sugar, flour, and salt until smooth.

  4. Add remaining ingredients: Beat in eggs, buttermilk, baking soda, and vanilla until fully combined (batter will be thin).

  5. Bake 30-35 minutes until a toothpick comes out clean.

2. Make the Frosting (Optional):

  1. While cake bakes, melt butter, cocoa, and Coca-Cola in a saucepan over medium heat.

  2. Remove from heat and whisk in powdered sugar and vanilla until smooth.

  3. Stir in nuts (if using).

  4. Pour warm frosting over the hot cake right out of the oven. Spread evenly.


✨ Tips for Success

✅ Extra fudgy? Underbake slightly (~30 mins).
✅ No buttermilk? Mix ½ cup milk + ½ Tbsp lemon juice/vinegar, let sit 5 mins.
✅ Storage: Keeps moist for 3 days at room temp (covered).
