Deep-Fried Root Beer Floats 🍺🔥

A carnival-worthy twist on the classic float—crispy, golden-brown batter pockets with a fizzy root beer surprise inside!


Ingredients *(Makes 8-10 fritters)*

For the Batter:

  • 1 large egg

  • ¾ cup root beer (regular, not diet—sugar helps caramelization)

  • 1 tsp vegetable oil

  • 4.75 oz (1½ cups) all-purpose flour

  • 2 tbsp granulated sugar

  • ¾ tsp baking powder

  • ¼ tsp salt

For Frying & Serving:

  • 1 quart neutral oil (canola, peanut, or vegetable)

  • Vanilla ice cream

  • Powdered sugar or caramel sauce


Instructions

1. Make the Batter

  1. Whisk egg, root beer, and oil in a bowl.

  2. In another bowl, sift flour, sugar, baking powder, and salt.

  3. Gradually mix wet into dry until just combined (small lumps are okay—overmixing = tough fritters).

2. Heat the Oil

  • In a deep pot, heat oil to 375°F (190°C) (use a thermometer!).

3. Fry to Golden Perfection

  1. Dip a tablespoon into hot oil to grease, then scoop 1 tbsp batter per fritter.

  2. Gently drop into oil (fry 3-4 at a time to avoid crowding).

  3. Fry 2-3 minutes, flipping once, until puffed and deep golden.

  4. Drain on a wire rack (not paper towels—keeps them crispy).

4. Serve Immediately

  • Top warm fritters with vanilla ice cream, a drizzle of root beer reduction (simmer ½ cup root beer + 1 tbsp sugar until syrupy), and powdered sugar.
