Cucumber Cottage Cheese Wraps
Ingredients (for 2 wraps):

1 large cucumber (or 2 small)

½ cup (120g) cottage cheese (low-fat or full-fat)

1 tbsp fresh dill (or chives, parsley)

1 tsp lemon juice

¼ tsp garlic powder (or fresh minced garlic)

Salt & pepper to taste

Smoked salmon, cherry tomatoes, avocado slices

Shredded carrots, bell peppers, sprouts

Instructions (5 mins!):

Prep the cucumber: Use a vegetable peeler or mandoline to slice the cucumber into long, thin ribbons (lengthwise). Pat dry with a paper towel to remove excess moisture.

Mix filling: In a bowl, combine cottage cheese, dill, lemon juice, garlic powder, salt, and pepper.

Assemble wraps:

Lay out 2-3 cucumber ribbons slightly overlapping to form a “wrap.”

Spread a spoonful of cottage cheese mixture down the center.

Add extra fillings (salmon, veggies, etc.) if using.

Roll & enjoy! Gently roll up the cucumber and secure with a toothpick if needed.
