Crustless Spinach, Onion & Feta Quiche

This easy, low-carb quiche is packed with savory flavors—caramelized onions, fresh spinach, and tangy feta cheese—all baked into a fluffy egg custard. Perfect for breakfast, brunch, or a light dinner!


Ingredients:

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cups fresh spinach (or 1 cup frozen, thawed & drained)

  • 4 large eggs

  • 1 cup milk (whole or 2%)

  • ½ cup crumbled feta cheese

  • Salt & pepper to taste

(Optional additions: ¼ tsp garlic powder, pinch of nutmeg, or a dash of red pepper flakes for heat.)


Instructions:

  1. Preheat Oven & Prep Dish:

    • Preheat oven to 375°F (190°C).

    • Lightly grease a 9-inch pie dish or similar baking dish.

  2. Sauté Onions & Spinach:

    • Heat olive oil in a skillet over medium heat.

    • Add onion and cook until soft (~3-4 mins).

    • Stir in spinach and cook just until wilted (1-2 mins). Remove from heat.

  3. Make the Egg Mixture:

    • In a bowl, whisk eggs, milk, salt, and pepper until smooth.

    • Fold in the cooked onions, spinach, and feta cheese.

  4. Bake:

    • Pour mixture into the prepared dish.

    • Bake for 35-40 minutes, until the center is set and the top is lightly golden.

  5. Cool & Serve:

    • Let rest for 5 minutes before slicing.

    • Serve warm or at room temperature.


Tips for Success:

✔ Drain Spinach Well: If using frozen, squeeze out excess water to prevent a soggy quiche.
✔ Add Protein: Toss in cooked bacon, ham, or sautéed mushrooms for extra heartiness.
✔ Make Ahead: Refrigerate for up to 3 days or freeze for longer storage. Reheat in the oven or microwave.
